Tomato Goat Cheese Dip

My grandmother used to make something like this…

Tomato sauce, goat cheese, toast. Hot and bubbly and great.

I have so many tomatoes, some of them are starting to get smushy, so the best thing to do is blitz them.

oh, and add cheese. Yum.

Ingredients:

  • 12 oz tomatoes
  • 2 oz goat cheese
  • seasonings
  • toast triangles

Quarter the tomatoes and into a food processor. Blitz until smooth. Put into a cast iron and cook over medium high heat for 10 minutes, stirring and seasoning, until some of the water has cooked off.

Drop the goat cheese in the center of the tomatoes and put in a 400 degree oven for 8 minutes or until it all gets hot and bubbly together.

Salt and pepper well, and eat with toast triangles.
