My brother is in Alaska, working on a boat, and he sent me some canned salmon in the mail.
So I added it to some leftover tofu, whipped up for a fake salmon tofu spread.
On crackers, with some home grown tomatoes. Very very interesting…
- 2 oz tofu, firm
- 1 oz canned salmon
- a bit of chives, diced
- juice of 1/2 lemon
- salt and pepper
Slice the tofu. I usually press my tofu, but I did not do it for this. A little extra water is good here. Add the canned salmon, lemon juice, and a good amount of salt and pepper, to taste.
Whip it up very well, scraping the sides of the food processor and whipping up again, until smooth. Stir in the chives.
Spread on some wasa crackers and top with freshly sliced tomatoes.
Very very interesting…
P.S. There was some more tofu left, so we did the Soy Sauce Scramble..
