My grandma’s stuffing, baked in leftover mushroom caps, with fried eggs.
I will tell you about my stuffing recipe. It is the best recipe in the world. And it is the only thing I made (and ate) for Thanksgiving this year..
Also, a gravy so very like this Cider-Sage Gravy (just with a roux, and I didn’t make a turkey, so no drippings).
A perfect post Thanksgiving breakfast..
- a half dozen large mushrooms
- 1-2 cups leftover stuffing
- 2 big spoonfuls of gravy
- a handful of Parmesan cheese, shredded
- a few fresh basil leaves, chopped
Pull the stems out of the mushrooms and chop them up. Mix them into the stuffing, gravy, cheese and basil. Season if needed. Then spoon into the caps and bake at 350 for 20 minutes.
Eat with fried eggs..
So much better than turkey.
