Spicy Shrimp Hand Pie

This is what happened with the last of the dough.. (3 pieces left). And I had some very spicy salsa left over from a party. Put it in a pocket and it becomes a hand pie..


  • 1 cup shrimp, cooked and chopped
  • 2 tablespoons spicy salsa (or add some hot sauce if your salsa is not very spicy- I like Franks!)
  • 1/4 cup onions, diced
  • 1/4 cup cheese, shredded (cheddar)
  • 1/4 batch of dough

Make the stuffing. Loosen up the onions in a medium frying pan, with a little oil. Add the shrimp and salsa and cook for a few minutes to get it all juicy together. You don’t want it to be too wet, so cook it down a bit.

Roll out each small piece of dough (I use a circular drinking glass) until about 1/8” thick. Use a ramekin to cut out a circle (3” diameter?). Put a spoonful of the stuffing in and a bit of cheese; be careful not to stuff it to much. Fold over one side and press down on the edges with your fingers, then a fork.

Put them on a greased baking sheet at 400 degrees for 15-20 minutes in the oven. Eat with tatziki, because- why not?
