A bunch of vegetables leftover in tiny portions…
So, I turned them into a salsa for my fish. And it turned out that the salsa became the main dish, with some Tilapia on the side.
Refreshing and colorful and cold and crunchy and tart and delicious.
- 1/2 small tomato
- a handful of pickled zucchini and baby carrots
- 1 small dill pickle
- 1/4 of an orange pepper
- 3 black olives
- 2 teaspoons of lime juice
- pinches of salt and pepper
- a few drops of hot sauce
The trick is to chop it all up into tiny pieces. A small dice for one cup total of the salsa mixture. Add the juice and seasonings. Maybe sprinkle in three or four drops of hot sauce? Mix up and put in the fridge while you cook your fish.
I put my a little herbs de provence on the fish, then put it on top of a cup of fresh spinach. The salsa gets piled right on top.
And all the sudden, you are eating healthy- on accident..
