- 2-3 cups leftover pulled pork, chopped very finely
- 4-5 tablespoons leftover ginger vinaigrette (or whatever you have)
- 3 tablespoons chopped herbs (cilantro, chives, basil, orange thyme, or whatever you have)
- eggroll wrappers (I think I used 4)
Cut the eggroll wrappers in four. Mix the pork, vinaigrette, and herbs together. If you don’t have a vinaigrette, you can just add in sesame oil, mustard, ginger or red wine vinegar, whatever you have…
Now, put the wrapper in your hand with your thumb wrapped around it and then add a big spoonful of pork into the middle. Squeeze and push down with the spoon into a little basket..
Then add them to a greased steamer and steam for 10-15 minutes.
The eggroll wrappers make them a little chewier than shumai or wonton wrappers, but you use what you have.
And they are still pretty good..
