Pork & Quinoa Stuffed Pepper

This is pretty easy. Mix it all together and you get an excellent and fast dinner.

Use whatever you have!

Makes 1 big meal or two little ones.

Ingredients:

  • 1/4 cup quinoa cooked in 1/2 cup water
  • splash of oil
  • 3 small mushrooms sliced
  • 1/4 onion, diced
  • splash of vinegar, or leftover pickle juice (that is my favorite)
  • some leftover pork chop, chopped (I had 1/2 of a big one, so maybe 1/2 cup chopped?)
  • 1 bell pepper
  • optional- cottage cheese to serve with, or sour cream, or you could top with shredded cheese

Preheat an oven to 350. Cook the quinoa by combining and then bring to a boil, lower to low simmer and cover until cooked through, 15 minutes or so.

In a medium hot saucepan, warm up the oil and then add the mushrooms and onion. Season with salt and pepper. Once starting to brown, turn down the heat and deglaze with vinegar (or pickle juice). Stir in the pork and then the quinoa.

Halve the pepper and scoop out the insides. Season. Stuff with the quinoa pork mixture and cook in theĀ  oven until tender and soft- 20 minutes or so.

This is so stupidly easy and you can put any leftover you want in it. Like Spicy Shrimp.

The combinations are endless.

I like to eat mine with cottage cheese, but add your creamy topping of choice.
