Poached Chicken with Lemon Yogurt Dipping Sauce

We had Meyer lemons. We had chicken, Greek yogurt, and red pepper. All we needed was the cheese so we could do the Chopped At Home Challenge with this meal..

Also, wrapping chicken in plastic wrap and poaching it is brilliant..

Ingredients:

  • 2 chicken breasts
  • 1/4 red pepper, chopped
  • 4 artichoke hearts, chopped
  • 2 big pinches of shredded cheese (Sargento 6 Cheese Italian- for the contest)
  • 1 Meyer lemon, rind and juice
  • 1/2 cup Greek yogurt

Butterfly the chicken breast by cutting it in half but keeping one side intact. Cover with plastic wrap and pound down to 1/2 inch thick. Season.

In the center, keeping a border of chicken, add cheese, red pepper, and artichokes. Roll up like a burrito- up the bottom, in the sides and over the top- and then roll very tightly with plastic wrap, twisting up the sides like a piece of candy, with the ends tied together. Make sure it is really tight. Add the chicken breasts to simmering water for 16 minutes, remove and let sit for a few minutes, and then cut the plastic wrap off and slice thinly. Season.

Add 1 teaspoon of juice and the rind of one lemon to the Greek yogurt. Season.

Dip the chicken pieces in the dip and enjoy it tremendously..

And don’t be freaked out about the plastic wrap.
