Also, this is how we dealt with our leftover cheeses before going off on a holiday.
Yeah, to holidays!
- 1 tbsp butter
- 1 tbsp flour
- 1 cup diced tomatoes with juices
- 1 cup shredded cheese (mixed bag)
- 1 cup milk (almond)
- fresh pepper
- 1 package tortellini
- bread crumbs
In a pot, melt the butter and whisk in the flour. Once combined, whisk in the milk and heat up slowly. Add the tomatoes after a few minutes. Bring to a simmer, then whisk in the cheeses. Once it thickens up, add the tortellini and cook through for a few minutes.
Add to a baking or cast iron pan, top with bread crumbs, and broil until toasty.
