Leftovers from our dinner party. I always make too much pasta, and Meg makes the best pulled pork in the world with orange juice.. (here’s the recipe).
So, I used all the piles of cheese left in my fridge to make mac n cheese with orange juice. A little sweet, but strangely really good..
- 1 cup cooked pasta, cavatappi preferred
- 1 cup cheese (colby shredded, parmesan, cream cheese, goat cheese, etc)
- 1 tbsp butter
- 1 tbsp flour
- 3/4 cup orange juice
- 1 tbsp heavy cream (or milk)
- 1/4 cup pulled pork leftovers
- some breadcrumbs
Cook the butter and flour together over medium heat until darkened. Add in the cream and stir to mix. Then add the orange juice and stir until blended. Add in the cheese and melt down. Then mix in the pasta and pork (or your other leftovers..)
Put into a baking pan, add breadcrumbs, and bake at 350 for 10 minutes. Then broil until browned.. And eat. Serves one.
