After a killer work week, I just wanted to come home and eat some cheese.
Meet the oven chimichanga, a perfect vehicle for leftovers…
- 1 medium tortilla
- 2 big spoonfuls of meat (quail)
- 2 big spoonful of beans (or rice, whatever filling you want)
- 1 slice of cheese
- 1 tablespoon butter
Oven at 450 degrees. Add filling (meat, beans, cheese, whatever) to tortilla and wrap up. Slather burrito with butter on all sides. Bake on both sides for 11 minutes each side. You could put a sauce on it, but I was too lazy to do that. Eat with guacamole.
Or lots of beers..
