A beach vacation always leaves a leftover mango hanging out for some reason..
And you know how I love mango and brie together.
The almost dead avocado actually mushes up in this and instead of getting avocado chunks, it becomes kind of a binding agent. Quite lovely.
- 1 mango, peeled and chopped
- 1/2 avocado (or the edible bits of 1 almost dead one), chopped finely
- 1/4 small red onion, diced
- 1/4 small red pepper, diced
- 1/2 lemon
- squeeze of lime
- salt and pepper
Mix it all together and season really really well.
And of course, spread on some baguette slices with brie and salsa.
Yes, I said brie.
