Sometimes it isn’t during the week that you are just too lazy to cook; sometimes it’s the weekend- after a brewery tour and tasting- that you come home and try to dress up a .75 cent box of mac n cheese because (you secretly love boxed mac n cheese) you are too lazy to do anything else… And my, it was delicious.
- 1 mac n cheese box, butter and pasta water
- the crumbs from the bottom of the bag of pita chips or pretzels
- tomato slices
- a few handfuls of cheese (Parmesan)
I don’t really like milk, so I make my boxed mac n cheese with butter and pasta water. Make your mac a little more liquidy than normal (like 1/4 cup more water), salt it a bit, and put it in a crock. Grind up your topping so it is a fine mash. Sprinkle on top of the mac, add a tomato slice, and a handful of cheese. Bake in a 350 oven until gold and bubbly.
