Kale Loaf

SO much kale. Sometimes I just can’t eat any more salad. So, I put the kale inside the bread.

Taken from this recipe on Souvlaki For The Soul. It is great because you don’t have to wait for it to rise…

  • 2.5 cups flour
  • 2 teaspoons of baking powder
  • 1 teaspoon salt
  • 3 cups kale, chopped finely
  • 1/2 cup fresh herbs – basil and mint
  • 1/2 cup Parmesan
  • 2 eggs
  • 1/2 cup olive oil
  • 1 cup Greek yogurt

Mix the eggs, yogurt, and oil together. Mix the other ingredients together and then mix in the wet ingredients. Put into a greased loaf pan and sprinkle the top with Parmesan. Bake at 350 for 45-55 minutes, or until done. Let it cool and then slather with butter.

Or eat it with the Bok Choy Stew
