SO much kale. Sometimes I just can’t eat any more salad. So, I put the kale inside the bread.

- 2.5 cups flour
- 2 teaspoons of baking powder
- 1 teaspoon salt
- 3 cups kale, chopped finely
- 1/2 cup fresh herbs – basil and mint
- 1/2 cup Parmesan
- 2 eggs
- 1/2 cup olive oil
- 1 cup Greek yogurt
Mix the eggs, yogurt, and oil together. Mix the other ingredients together and then mix in the wet ingredients. Put into a greased loaf pan and sprinkle the top with Parmesan. Bake at 350 for 45-55 minutes, or until done. Let it cool and then slather with butter.
