Kahlua Mac and Cheese

Boozy, rich, comforting, hair of the dog… Just the trick.

I mean, why not do this?

Makes 1 big portion (just for you!)  or two small ones..

  • 1 cup pasta, uncooked
  • 1 pat butter
  • 1/2 tbsp flour
  • 1/2 cup milk (or pasta water if you don’t have milk, which I often don’t..)
  • 1/8 cup Kahlua
  • 1 cup shredded sharp cheddar (or whatever cheese you have)
  • sprinkle of breadcrumbs (optional)

Cook the pasta al dente and drain.

Warm butter over medium heat and whisk in flour until smooth. Then, whisk in milk and Kahlua until it starts to bubble. Then remove from heat and add the cheese until it is melted.

Fold in the pasta. Then sprinkle on the breadcrumbs and mix in. The breadcrumbs will thicken it up, so you know, optional as you like it.. A little salt and pepper finishes it off!

You can bake it, but I just ate it.

And then, you know, a nap.
