- 1 tortilla
- 2 chicken sausages, sliced
- 3 eggs
- 1 big spoonful of spicy salsa
- 1/3 cup beans
- 1 big handful of shredded cheese (cheddar)
- a few Roma tomatoes
- some chopped bell pepper (orange)
- chopped chives
- pat of butter
Cut the tortilla into 4 pieces and put into a cast iron and into a 375 degree oven until they crisp up, 5-10 minutes.
In a pan, cook up the sausage pieces until they get a nice sear on them. Add the beans to warm them up for a few minutes. Remove.
Turn down to low and add the pat of butter. Whisk up the eggs really well with seasoning. Add a scoop of salsa. Add to the pan and scramble up slowly until cooked.
Make a salsa by chopping up and mixing together the bell pepper, tomatoes, and chives. Season.
To the tortilla, top with the eggs, beans, sausage, and cheese. Put back into the oven for a few minutes until the cheese is melted.
Top with the salsa and some more seasoning before eating it.
