Green Compound Butter

The first frost threatened..

So I cut back some of the fresh herbs and made some sage and basil compound butter.

I am preparing for a long winter.


  • 2 sticks of good quality unsalted butter, softened
  • 1 large handful of fresh basil
  • 1 large handful of fresh sage

In the food processor, add the sage and chop up finely. Add a stick of softened butter and process together until combined. Drop onto a sheet of plastic wrap and form into a log, rolling it up and sealing.

Repeat with the basil.

Then into the freezer, and when it is cold and the snow comes in and you miss the spring, you can pull it out and cut off a piece and put it on bread or in pasta or in soups..

Makes me feel warm..
