Ginger Scallion Rice

This is really good. 

Ginger and scallion fried up and mixed into rice.

It is, maybe, one of the easier things to do in the world of cooking..

But if you add in some leftover coconut flakes, you are a glorious being.


  • 1 splash of oil
  • 1 scallion, diced
  • 1 inch fresh ginger, peeled and diced
  • 1 garlic clove, diced
  • 1/4 cup coconut flakes
  • 1/2 cup uncooked rice
  • 1 cup water

In a medium hot pan, heat up the oil and then add in the scallion, garlic, coconut, and ginger. Cook it up for a few minutes until everything starts to smell great. Then add in the rice and brown it a bit, stirring it around for a few minutes, and then add in the water. Bring it to a boil and then cover and turn it to low. Cook until the water is gone and the rice is done.

Eat with Salmon Slices.

So good..
