Saw this on the Food52 Genius recipes yesterday and I happened to have all the ingredients..
A bit of leftover Greek yogurt, a half lemon, and some lingering arugula..
The best part is the end, when the yolk mixes in with the lemon yogurt.
I licked the plate.
Literally licked it.
Ingredients:
- 1 big scoop plain Greek yogurt
- juice from 1/2 lemon, divided
- a handful of arugula
- 2 eggs
- pat of butter
Mix the yogurt and a big squeeze of lemon together and season with salt and pepper. Toss the arugula on top.
In a hot pan, melt the butter and then add the eggs and cook til you like them. I like mine over medium, where the yolks are still runny but the whites are cooked.
Slide the eggs onto the yogurt arugula mix and season well. Squeeze a bit more lemon on top.
