Dill Pesto Shrimp

You know how it goes.. There was dying dill, which started as pesto, and then Greek yogurt was added, making for creamy, lemony shrimp.

And then I added hot roasted vegetables..

Ingredients:

  • 1/4 cup fresh parsley
  • 1/4 cup fresh dill
  • 6-8 walnuts
  • 1 small garlic clove
  • squeeze of lemon, maybe a little rind
  • 2 tbsps olive oil
  • 1/2 cup plain Greek yogurt
  • a bunch of small cold cooked shrimp
  • hot veggies cut up into chunks (asparagus, cherry tomatoes, potato)

Just like making pesto- pile up the Parsley, Dill, walnuts, and garlic. Chop until fine. Put in a ramekin and add lemon juice and oil. Season. Mix into the Greek yogurt. Then dollop some of the yogurt pesto on the shrimp and mix up.

I added my shrimp to hot roasted veggies and ate it all.
