This was a lunch thing that I made really quickly from our fridge of leftovers..
It sits in itself for a few hours until you are ready to eat it, and then it is refreshing and comforting and hearty and gorgeous.
- 1/2 cucumber, chopped
- 1 small tomato, chopped
- 1/4-1/2 cup cooked rice
- 2 radishes, chopped
- 1 oz cooked sausage, chopped
- a dash of olive oil
- a dash of vinegar (pomegranate, or whatever you have)
- some chopped fresh herbs (I had parsley)
Combine everything and then mix up and season really well. Let it hang out for a few hours during your morning work.. and then eat it to keep you going for the rest of the day..
