It started when my mother brought over the leftovers of a giant Costco goat cheese log rolled in cranberries..
And then I ran out of flour..
Still, it worked out well, with some inspiration from these Italian Polenta Cookies and some extra cranberries..
- 4 oz goat cheese, softened
- 1/2 cup butter, softened
- 1 cup sugar
- 1 tsp vanilla
- 1 egg
- juice from one small orange (1 1/2 tbsp)
- 2 1/2 cups flour (whole wheat)
- 1 cup cornmeal
- 3/4 cup fresh cranberries, course chop or dice
- zest from one orange
- powdered sugar
Mix the goat cheese, butter and sugar together. Then add in the vanilla, egg, and orange juice.
Mix together the flour and cornmeal, then add to the wet ingredients, slowly, until combined. Mix in the cranberries.
Let the dough rest in the fridge for an hour.
Grease a cookie sheet. With a tablespoon, scoop out little circle nuggets and put them onto the cookie sheet. You get, maybe 50-60 of them.
Then bake at 350 degrees for 15 minutes. Let them cool. Mix the powdered sugar and orange zest together. In a plastic bag or tub, mix the sugar with the cookies until they are fully coated.
Then you can eat them.
