Crab Melt

Imitation Crab in my fridge. What to do with it?? Well, add cheese…

  • 2 small tortillas
  • 2 small handfuls of imitation crab flakes (about 4 oz)
  • 2 pieces of cooked bacon
  • 1 small scoop of tzatziki (or mayo if you don’t have any)
  • 1/2 celery stick, diced
  • 3 Roma tomatoes, diced
  • 2 small slices colby cheese (or 1 square cut in half)
  • 1/2 pat of butter

Combine crab, tomato, celery, bacon, and tzatziki. Add pepper. Put a slice of cheese on each tortilla and then pile up the crab insides. Fold up like a burrito, making each one into a rectangle and as flat as possible.

Add the butter to a fry pan over medium heat. Put the fold side down in the pan for five minutes until brown, then carefully turn over. They should stay together now. Cook on the other side for 5 minutes.

Then cut them in half on a diagonal so you can see the cheesy insides. Plus they are more fun to eat that way…
