Ben moved back to England and he left a bunch of stale cookies behind. They make an excellent crust to Meg’s family’s sour cheesecake recipe..
A perfect dessert for someone like me who isn’t really into the sweet things.
- 12 or 15 or 17 leftover cookies
- 1/2 cup butter, softened
- 8 oz sour cream
- 1 pound cream cheese, softened
- 1 cup sugar
- 4 eggs
- 2 tsp vanilla
In a food processor, crush cookies. Add butter and 1/4 cup sugar. Push into a pie pan and bake for 10 minutes at 350. Let cool.
Beat together cream cheese, 1/2 cup sugar, eggs, and 1 tsp vanilla. Add to top of crust. Bake at 350 for 20 minutes. Let cool for 10 minutes.
Mix sour cream, 1/4 cup sugar, and 1 tsp vanilla. Add to top of pie. Bake for 10 minutes. Top with berries!
