Cilantro Soda Bread

Not the most traditional combination, but I had some leftover cilantro..

Also, soda bread is super easy to make. I didn’t realize that..

  • 1 egg
  • 1 cup sour cream
  • 2 cups flour
  • pinch of salt
  • pinch of sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon caraway seeds
  • 1 big bunch cilantro, chopped
  • splash of olive oil

Mix egg and sour cream in a bowl. Fold in flour, salt, sugar, baking powder and soda. I used my kitchen aid with the dough hook. Then add caraway seeds and cilantro until combined. Put into a greased cake pan, score the top with an x, drizzle with a splash of oil, and bake for 40 minutes in a 350 degree oven.

So good hot with a slather of butter, or maybe dipped into the juices of a beef roast..
