This salad is so easy..
Pile everything in the middle and just chop away.
Kind of like you would make pesto.. Chop and scoop, repeat.
Everything gets into its own shape, creating interesting textures..
- 2 cups of kale
- 1 cup of spinach
- 1 giant basil leaf
- 1/2 tomato
- bit of cucumber (other ends of things you might have?)
- 1 tablespoon Parmesan
- 8 almonds
- 1 slice sourdough
- 1/2 cup cooked leftover shrimp
- 1 teaspoon spicy mustard
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- pinch of sugar (or orange juice?)
Mix the lime juice, sugar, and mustard together, then whisk in the oil. Add pepper.
Chop up all the rest of the ingredients together, piling it all up and chop some more.
Mix into the dressing and eat it with a friend.
