So, the last of the chicken meets leftover hard-boiled eggs..
We call this chicken egg salad.
Don’t fight it..
- 2 hard-boiled eggs
- 3 oz chicken meat, chopped (about 1 chicken breast)
- 1 spoonful of Greek yogurt
- 2 tsp mustard
- 1 tsp apple cider vinegar
- 1 tsp lemon juice
- 1 tbsp olive oil
- romaine lettuce, chopped
Peel and cut the eggs in half. Scoop out the yolks and mash them. Add the mustard, vinegar, lemon juice, and olive oil to the yolks. Season well. Chop the whites and add to the yolks. Mix in the chicken and Greek yogurt. Let it sit in the fridge for an hour or so (or longer). Add the parsley and season to taste.
When you are ready to eat it, mix in the romaine lettuce. And then eat it.
So good for you.. Don’t feel guilty about it.
