Catfish Balls

Meg calls it her greatest bounty so far. Large trays of leftover cooked catfish fillets and pineapple rice, which is great until you eat it for a whole week… Enter the catfish ball. Spicy, hearty, cheesy, and delicious.


  • 2 cups of catfish, diced
  • 1 cup pineapple rice
  • 1 egg
  • 1/2 cup melting cheese, shredded
  • 2 tablespoons hot sauce (Franks)
  • 1 big bunch parsley, chopped
  • 1 cup breadcrumbs

Add catfish, rice, egg, cheese, parsley, and hot sauce together in a big bowl – like if you were making meatballs. Season. Make them into small balls (golf ball sized) and roll in breadcrumbs. Makes 15-20 (I made 17). Bake at 400 degrees for 20 minutes, turn them over. Then broil for 5 minutes more or until crusty.

Drizzle with more hot sauce.
