It is made with bacon, but if you have leftover Sausage Burnt Ends, you can use those too..

Also, I started to make my own pasta, and it. is. wonderful.

Makes 1 big meal, or two small ones


  • 1/4 pound spaghetti or linguini
  • 1/4 cup reserved pasta water
  • 1/4 cup Parmesan cheese, shredded
  • 1 egg
  • a good amount of diced pork, sausage or bacon or Sausage Burnt Ends
  • fresh cracked pepper

Cook up the pasta al dente. Reserve some of the pasta water.

Scramble the egg with the cheese. I used a double boiler (new!). In the top, cook up the pork, then add the pasta and reserved water. Whisk in the egg and fresh cracked pepper, stirring until it becomes a nice looking sauce.

Over the double boiler, you don’t have to worry about the egg scrambling, but if you don’t have one, take it off the heat and stir in the egg until the egg is cooked enough for a silky sauce, but not scrambled.

Silky smooth.
