Can’t go wrong with this one.
Buffalo chicken with some leftover cottage cheese/ blue cheese dressing thing that I made..
It is really all about the dressing here..
- leftover chicken, chopped
- Frank’s hot sauce
- leftover blue cheese dip (from take-out wings)
- cottage cheese
- a pinch of oil
- a pinch of vinegar, Pomegranate flavor preferred
- Romaine lettuce leaves
- chopped carrots
Mix the cottage cheese, blue cheese, oil, and vinegar together until you get the right consistency to make it kind of drizzly, like dressing. Maybe a tsp of water, or something. And season it.
Chop up the leftover chicken and toss it in a pan to heat it up. Mix in some Frank’s hot sauce, because it is the best. Top the lettuce leaves with chicken, dressing, and carrots.
