BBQ Breakfast Enchiladas

My sister had one of those crazy murder-mystery parties..

A Western.

Accompanied by BBQ – delicious brisket, homemade mac n cheese, dry turkey, and lots and lots of little sauce packets. Way too many..

You can use up a lot of sauce on these breakfast enchiladas..

If you don’t get killed the night before, this will soak up all the Western whiskey..


  • 6-8 small taco flour tortillas
  • 8 single sized servings of bbq sauce (1 to 1 1/2 cups?), sweet and spicy mixed, then divided
  • a pat of butter
  • 2 eggs
  • 1/2 cup leftover mac n cheese
  • splash of oil
  • 1/2 small onion, diced
  • 1 cup leftover turkey, diced
  • 1/2 avocado, diced
  • 1/2 medium tomato, diced
  • handful of cheddar cheese, shredded

Scramble the eggs up slowly in a low heat pan with the butter. Once firmed up, fold in the mac n cheese until warm and mixed in. Remove.

Add the oil to a medium heat pan and sweat. Season. Add the turkey and 2 bbq sauce servings (1/4-1/2 cup?). Cook in.

Preheat an oven to 375 degrees and grease a small pan. Put the sauce in a bowl and dip the tortillas in the sauce, both sides. Add a little bit of the egg mixture and the turkey mixture, some tomato, some avocado, and roll up, with the seam tucked under. Repeat with them all.

Then drizzle the rest of the sauce, sprinkle with cheese, and bake for 20 minutes or so, until they are ready for you to eat..

Serves 4.

And I will tell you a secret. Meg was the murderer..
