Banana Pancakes with Yogurt Sauce

Do not be fooled.

These are not really pancakes, but leftover banana flavored egg patties in disguise. They won’t taste like you are used to, but they sure are strangely delicious…

It works best with an almost dead leftover banana.

And the topping came together spontaneously. Preserves gifted to us by Michelle (thanks!) mixed in the yogurt, for a nice fancy topping.


  • 1 over ripe banana
  • 2 eggs
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1 pat of butter and a tiny drizzle of oil (sesame oil maybe?)
  • 1 large scoop vanilla Greek yogurt
  • 1 large scoop spiced peach preserves (cinnamon flavored- but use what you have open already)

Mash up the banana, then whisk in the eggs, baking powder, and cinnamon. In a hot pan, heat the butter and oil (or you could just spray it). Add just a tiny ladle of mixture (or two spoonfuls) to the pan in a pancake-like shape. Flip it after a few minutes and then on the other side for a few more.

These will be pretty flat, but you can still stack them up and cut into them for that pancakey goodness. Combine the preserves and yogurt, and then drizzle over top.

This is quite the experiment, and we ate the whole thing… Makes about 7.
