Bacon Cheddar Biscuits

What makes these great?

Leftover bacon grease.. Of course.

Then you can eat these beauties with bacon..

  • 2 cups flour, plus a bit more
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 big handful of shredded cheese (cheddar), about 1/2 cup?
  • 3 tablespoons butter, cold and cubed, plus more for spreading on biscuits
  • 1 tablespoon bacon grease
  • 1 cup whole milk

Mix the flour, baking powder, salt, and sugar. Cut in the butter with a pastry cutter or fork, keeping the butter still in crumbs. Stir in the cheese, bacon grease, and milk. The dough should be pretty shaggy. Turn it out onto a well floured surface and fold it over a few times, patting it down. But don’t touch it too much.

Then pat it out until its about 1/2 inch thick and press a biscuit cutter into the dough to form rounds. But who has a biscuit cutter? I used a glass cup. It makes about 8-10. Put onto a greased sheet and into a 450 degree oven for 10 minutes.

You could do 12 or 13 minutes, but I like mine kind of under done. Smear some butter on them while they are hot.

And eat with bacon and eggs.

Especially if you are hungover..
