Avocado Pasta

This happened out of a need to eat avocado. Avocados are creamy dreamy, and smashed up, they make a great sauce for pasta.


  • 1/2 avocado
  • 1/2 lime, juice and rind
  • 1/2 cup onion, chopped
  • 1 cup of broccoli
  • 1 large pinch of Parmesan
  • 1 cup of cooked angel hair pasta (we used shirataki noodles..)
  • 1/4 cup reserved liquid (from boiling pasta or broccoli) (or you can just use tap water)

Saute the onion until translucent, take off the heat and add avocado, lime juice, lime rind, salt and pepper, and smash it all together with a fork. Add a tiny amount of reserved liquid until sauce-like. I used 1/4 cup. Add the cooked noodles and broccoli -and mix and top with cheese. Season.

Eat with the Cilantro Lemon Crackers and this is one mean green pasta.
