This coleslaw will last forever, which is good, because heads of cabbage were 25 cents a piece the other day in preparation for Saint Patrick’s Day…. Alas.. Do this.
- 1 head of cabbage cut into thin strips (mix your colors!)
- 1 red onion
- 1 cup of sugar
- 1 cup of cooking oil
- 1 cup of vinegar
- 1 tbsp of salt
- 1 tbsp celery seed
Mix cabbage, sugar, onion together. Boil the cooking oil, vinegar, celery seed, and salt. Pour over the cabbage and mix. Keep in the fridge for up to a month.
We put it in lunch wraps, baked it with chicken for dinner, ate it out of the bowl standing with the fridge door open. You know… nice and refreshing, just in time for Spring.
