Artichoke Goat Cheese Deviled Eggs

Do other people go to visit family and clean out their fridge?

This is what we found..


  • 6 eggs
  • 6-8 quartered marinated artichoke hearts, diced (you know, from the can), with 1-2 tablespoons of their gorgeous oil
  • 2 oz goat cheese
  • 1 scallion, diced

Boil the eggs. Peel them, halve them, and scoop out the yolks. Mix in the artichokes, oil, scallions, and goat cheese to the yolks. Season well.

Stuff the insides back into the whites. Eat.
