Apple Pork Empanadas with Egg

Eat empanadas for breakfast. Please. Just do it.

Leftover pulled pork from the housemate.. Pizza dough leftover from the pizza party.. Or you could make an actual pizza, which is what I did with the leftovers of this meal…

Ingredients:

  • 1 small pizza dough ball (about 1/4 of a standard recipe)
  • 1/2 cup pulled pork
  • 1/4 onion
  • 1/4 apple
  • 1 teaspoon rosemary, chopped
  • 2 eggs (1/2 raw egg reserved)

Scramble up the eggs with the rosemary, real slow so they are fluffy. Season. Slice the onions and apples very thin and saute up until soft and translucent.

Roll out the dough and cut out 6 circles with about a 3 inch diameter. Add a little bit of egg, apple mixture, and pork to the center of each circle. Then wet the rim with water and fold over each one. Secure the ends with a fork and then make any edge design you want to..

You can brush with egg if you saved some when scrambling.. Then bake at 400 for 15 minutes.

We dipped them in some jalapeƱo yogurt sauce and it was delicious..
